"Lift me Up" Dessert
4 Jumbo egg Yolks
1/2 cup Sugar
1/2 Milk (whole)
16 oz ricotta cheese
2 oz semi-sweet chocolate grated
2 cups HEAVY whipping cream
2 tablespoons cocoa
1 cup cold espresso (stop by Dunn Bros and get 1 cup- the looks you get are great- Umm 1 CUP of espresso?)
Make sure you get it cold first - I put it in freezer but dont freeze.
1/4 cup light rum
22 ladyfingers found sometimes in the freezer section.
Beat egg yolks and sugar in a 2-quart saucepan on medium speed about 30 seconds or until well blended.
Beat in milk. Heat to boiling over medium heat, stirring constantly. Reduce heat to low; boil and stir 1 minute.
Place plastic wrap or waxed paper directly onto milk mixture in saucepan. Refrigerate about 2 hours until cool.
Mix milk mixture, cheese and chocolate. Beat whipped cream and two tablespoons in a Chilled medium Bowl until stiff.
Mix espresso and rum in another cup. I usually keep it in a glass measuring cup.
Arrange half of the lady fingers in a single layer on an ungreased rectangular baking dish, 11X7X 1 1/2 inches.
Gently pour a little of the coffee/rum mixture over the ladyfingers, do not soak.
Spread half of the cheese mixture over the ladyfingers and then spread half of the whipped cream mixture over the cheese mixture. Repeat with remaining lady fingers, coffee mixture, cheese mixture and whipped cream mixture.
Grate the bar of Semi-sweet chocolate all over the top. The more the merrier with chocolate.
Cover and Refrigerate for at least 3 hours.
